Maccheroni alla calabrese

Macaroni with ham (4-6 portions)

 

1 kg ripe tomatoes
100 g. mild salted ham
1 yellow onion
2-3 pieces of garlic
2 spoons olive oil
3 spoons lard
1 chili
400 g. macaroni
100 g. caciocavallo
1 bunch of parsley leaves
1/2 bunch basil
salt, fresh grated pepper
1/2 teaspoon blackpepper

 

Wash and peel tomatoes. Cut the vegetables in small pieces. Cut the ham in stripes, mince the onion and the garlic. Warm upp olive oil and 1 spoon of lard. Fry lightly onions and chili just to soften them. Add garlic and ham and keep on frying just a bit more before mixing with tomatoes. Let the sauce to cook at low temperature for ca 45 minuter and stir often while waiting. Put 3 litres salted water on fire in a pot, break the long macaroni in smaller pieces and simmer them for about 8 minutes until they are soft but not too much: check out the package. Grate cheese and mince parsley and cut basil in shreds. Put salt and pepper on tomato sauce, trash chili and add 3/4 of parsley. Grind pepper in a mortal. Let macaroni to rinse and mix them with the rest of lard and the grinded pepper. Spill over cheese and tomato sauce and spread the herbs over the dish.

Tonno alla marinara

Tuna dish (4 portions)

 

4 slices fresh tuna ca 200g
12 pieces garlic
salt, fresh grated pepper
1 Kg. ripe tomatoes
50 g. black olives with no pips
2 spoons capers
1 small yellow onion
1 bunch of basil
some fresh mint leaves
1/2 dl olive oil
1 1/4 dl dry white wine

 

Take off the skin from tuna slices and dry them with crepe paper. Press garlic and fill the fish slices with it, put salt and pepper on it. Set oven to 175° C. Wash and peel tomatoes (if you are using preserved ones, let them dry carefully). Cut olives in small pieces. Mince capers and onion and cut basil and mint in shreds.
Grease with a bit of olive oil a pan. Set the fish slices one close to the other and spill the wine over.
Spread tomatoes, onion, olives, capers and half of the herbs over and cover everything with the remaining olive oil.
Put salt and pepper. Place it in the oven for 20-30 minutes.
Sprinkle the rest of the herbs and serve.
